Beetroot & Parsnip Rosti with Feta

Serves 4 if doubled up.

Use feta instead of goat cheese.

Make double and mix everything minus the egg (do not double the egg!).

Remove 1/2 of the mix and keep for a salad the next day adding some fresh mint.
